Yellow tea sits between green and white tea in terms of processing, but it is not simply a middle ground. What sets it apart is an additional step called "sealed yellowing," where the leaves are wrapped and left to slowly transform under controlled heat and humidity. This process breaks down the grassy sharpness typical of green tea and replaces it with something warmer and rounder, without the fuller oxidation of an oolong.

Pingyang County sits in Wenzhou, Zhejiang Province, a coastal region of southeastern China known for its mild climate, abundant rainfall, and misty mountain terrain. The area has been producing yellow tea for centuries, with records dating back to the Qing Dynasty when Pingyang Huangtang was listed as a tribute tea to the imperial court. Today it remains one of the very few places in China still producing authentic yellow tea, a category that has largely disappeared elsewhere due to the complexity and time required to make it correctly. The local cultivar, Pingyang Tezao, is an early-budding variety native to the county, prized for its tender shoots and naturally sweet character. It is the combination of this specific cultivar, the region's temperate growing conditions, and the traditional sealed yellowing technique passed down through generations of local farmers that gives Pingyang Huangtang its distinctive flavor, one that cannot be replicated outside of this county.
